We are opening a small artisanal bakery and coffee shop in the heart of Brussels, just steps from Place Ambiorix. Our focus is on high-quality, handcrafted baked goods, with an emphasis on laminated pastries, natural fermentation, and locally sourced ingredients. As we build our team, we’re looking for someone passionate, skilled, and excited to help shape the identity of our new bakery.
Role Overview
We are seeking an experienced
Head Baker to lead our baking operations. This is a full-time position with significant creative freedom. You’ll be responsible for developing and producing our core range of sourdough breads and laminated pastries, ensuring consistent quality, and playing a key role in defining our product offering as we grow.
Key Responsibilities
- Produce high-quality laminated and yeasted pastries and naturally fermented sourdough breads
- Develop and refine recipes, seasonal items, and new product lines
- Oversee daily production planning, timelines, and inventory
- Ensure consistency, quality control, and adherence to food safety standards
- Manage ingredient sourcing in collaboration with the bakery-manager
- Organize and maintain a clean, efficient, and safe bakery environment
- Potentially train and supervise additional baking staff as the team expands
Requirements
- Minimum 2 years of professional experience with laminated pastries and sourdough bread
- Strong understanding of fermentation, dough handling, and lamination techniques
- Ability to work early mornings and manage production independently
- Creativity, attention to detail, and passion for craftsmanship
- Good communication and organizational skills
