Den Arno

A sustainable beer cookie made from beer lees with a refreshing beer jelly: a crispy, flavorful, and circular snack innovation.

About the product...

Den Arno is a circular, artisanal cookie developed from brewers’ grains, a fiber-rich residual product from the brewing process. The dried and finely ground beer lees form a nutritious main ingredient that contributes to the characteristic roasted malt notes of the cookie. Sugar, vegetable butter, wheat flour, and egg provide structure, binding, and a crispy texture.

The cookie is finished with a refined, stable beer jelly, prepared with beer that provides aroma, color, and a subtle hop profile. The combination of sugar and agar-agar gives the jelly a firm, clear gel structure with a pleasant mouthfeel. Thanks to this composition, the cookie remains crispy and the jelly retains its shape and flavor during storage.

Production involves controlled drying of beer lees (<10% moisture), precise preparation of the dough, baking at a core temperature of 180°C, and hot preparation of the beer jelly (≥100°C). This results in a microbiologically safe, stable, and sensorially appealing product that combines Belgian beer culture and circularity
